A breakfast of champions

I am going to let you in on a secret that you probably already know if you have been reading this blog for any amount of time... I love food.  I love making food and tasting food. So, today I am letting you in on the best breakfast ever. Period. Full of sweet potatoes, sausage, spinach, eggs, cheese, and coffee (of course!)  This is honestly my favorite breakfast. Anytime we have a little bit more time in the morning this is what I make unless of course I am making coconut pancakes (but that is a recipe for another day...)

I am basically of the belief that sweet potatoes make everything better.

As does olive oil, iron skillets, sausage, onions,

and eggs!
Make sure you salt and pepper those bad boys.

SPINACH the super food!

A Breakfast for CHAMPIONS

The beautiful thing about this breakfast is that it is SO simple and you can change it up however you like and to your tastes.  Let me tell you how I do it and you can change whatever you like:

(this is for feeding two adults and one little person)

  • 3  pre-cooked breakfast sausage links (or two patties) cut up small. (I get the pre-cooked turkey links but you may use whatever you like)
  • 1 medium sweet potato diced. I also will use 2 regular potatoes OR sweet and regular potatoes (crazy!)
  • a half yellow onion diced.
  • 1 Tbs of olive oil for sauteing potatoes, onion, and sausage (you may need more).
  • Butter for frying eggs (as needed)
  • 2 eggs per person (or if your husband is like mine 3 or 4 for him!)
  • a handful of (washed!) spinach or as much as you like
  • Cheddar or Parmesan  cheese for sprinkling on top.
So easy! And tasty!

  • Heat iron skillet with olive oil then add sweet potatoes, onions, and sausage. Season with salt and pepper.  Cook till potatoes and onions are tender (if you like your potatoes a little crispier you can set  them in the oven to broil for  few minutes. But watch closely! They get crispy fast!)  If you have a second skillet you can start cooking the eggs to your liking.  First heat your skillet with butter or oil and then crack eggs gingerly into skillet. Turn heat to low-medium and salt and pepper to taste.  If you do not have another skillet wait till potato hash is cooked than add to another container and begin to cook eggs.  While eggs are cooking get spinach out and add to individual bowls or plates.  Once potato hash is cooked place on top of waiting spinach, than add eggs on top of hash and top it off with cheese of choice.
This meal should only be enjoyed with a steaming hot cup of coffee (preferably from Sunergos coffee) but to each his own! Enjoy!
