I recently invested in a Waffle maker one of the best decisions of my life. Waffles go so far beyond breakfast food. You can have them for lunch or dinner, gluten free, or good old traditional. I do not regularly keep bread in my house but sometimes I get a hankering for a sandwich and what does a girl do? Waffle sandwich of course! The other day I had a delicious cornbread waffle sandwich with pulled beef, horseradish, spinach and peppers. So, many things you can do with waffles.
Let's talk about my lunch today:
- 1 cup milk
- 1Tbs apple cider vinegar
- 1 egg
- 1/4 cup cooking oil
- 1cup cornmeal
- 1cup all-purpose flour
- 1Tbs baking powder
- 1tsp baking soda
- 1tsp salt
- 2 ounces sharp cheddar cheese
I had a super big helper!
We made a super big mess too! But that was okay.
I adapted my recipe from Everyday Southwest. The reason it is adapted is because I was missing half the things it called for (like corn) I want to try it again and actually have all the stuff it calls for. But even without half the stuff it was delicious.
Jude was great helper he did decide to lick the red pepper top (with the lid off) and didn't think that tasted very good. The heat did not seem to bother him though... at least after a drink of water. We had few mishaps today:
Oops!
It still tasted good though.
I topped my waffle with a spinach, an over-easy egg, and salsa. You can do whatever you like; chili, hot sauce whatever suits you! If you have never tried a savory waffle (or pancakes for that matter!) I encourage you to try it out. It is an adventure your mouth is waiting to go on. :)
Delicious!
Interesting... I may have to try this! Of course, I still think a sweet waffle sounds best ;)
