These muffins are a sweet, tasty way to get my three-year-old to eat vegetables! They are about as healthy as muffins can get (maybe if I added bran they'd be even healthier.. will have to think about that!) and they eat like a yummy treat!
Ingredients:
(Makes 12)
1/4 c canola oil
1/4 c brown sugar
1 egg
3/4 c applesauce
1 c grated carrots
1 c grated zucchini
1 3/4 c whole wheat flour
2 t baking powder
1 t cinnamon
1/2 t ground nutmeg
1/2 t salt
2 T milled flax seed (optional)
1. Grate carrots and zucchini. Set aside.
2. In a large bowl, whisk together oil and sugar.
3. Beat in egg, then applesauce.
4. Stir in carrots and zucchini.
5. Preheat oven to 400F
6. In another large bowl, whisk together flour, baking powder, cinnamon, nutmeg, salt and flax seed.
7. Fold dry ingredients into wet, until just mixed.
8. Spoon batter into (greased or paper-lined) muffin cups and bake approximately 20 mins (mine take longer because of the flax seed, applesauce, and grated veggies. Plan for longer and that they will be very moist when done.) until a toothpick comes out clean when inserted in muffin.
9. Let cool, then enjoy! (Can be frozen if need be)
Look at you, Ms healthy :)! I will have to give these a try sometime soon!!
