Coconut, who woulda thunk it? I like coconut. I mean, I reeeaaly like coconut. It is such an odd thing to one day wake up and like something that has been detested for so long. Do you know what I mean? I have experienced this in some degree before with other foods but never like this. It all started with a walk (many things start with a walk with me) we walk a lot. (What can I say? I love being out of doors). The other evening I had two lovely ladies over for dinner, after dinner we had a walk, a walk that just happened to drop us at the ice cream shop (funny how that works out). I was browsing over the ice cream flavors and kept coming back to the coconut, almond, fudge flavor. Which is odd because typically I would just think "ewww, coconut!" But not today. I asked to have a taste sample, it was delicious!
The young man told me it was made with real coconut. You could tell. I was hooked. I got a scoop in a waffle cone and for five whole minutes my taste buds enjoyed a heavenly bliss. I am so hooked in fact, that the following day while picking up some groceries I just "had" to pick up some coconut milk. I now have coconut milk in my coffee (I typically don't put anything in my coffee) I have coconut milk with my muesli every morning for breakfast, I have even started drinking coconut milk plain! What has happened to me? A week ago I would have sworn I hated the stuff. Because I did. Now it is my new favorite food. You would think I was having some sort of pregnancy craving, but my being pregnant is so far from being possible that it is depressing to think about. I would understand liking coconut ice cream, I mean, ice cream is ice cream, coconut or not ice cream is yummy. But coconut milk? Now I have even added coconut oil to my list of groceries. I have always known it to be a great oil to eat and cook with but have always avoided it due to my strong dislike of its origin. If I am going to be a coconut lover I might as well go all the way.
